- 1 Tbsp coriander seeds
- 2 tsp cumin seeds
- 1 Tbsp black or yellow mustard seeds
- 1/2 tsp whole cloves
- 1/2 tsp fenugreek seeds
- 1/2 tsp black peppercorns
- 5 to 7 or less dried red Thai or cayenne chilies, stems removed
- 1 tsp ground turmeric
- Place spices other than turmeric in a coffee grinder and process until finely ground. Stir in the turmeric.
